Potato and Two Cheese Soup Delicious and so cheesy


  • 8 cchicken stock
  • 6 mediumyucon gold potatoes peeled and shredded
  • 1 mediumonion diced
  • 2 tspcajun seasoning
  • 1 lbvelveeta cheese
  • 2 cshredded sharp cheddar cheese
  • 2 Tbspparsley chopped
  • ·salt and pepper to taste

How to Make Potato and Two Cheese Soup

  1. Place the stock in a large pot over med high heat. Add the potatoes, onions, and cajun seasoning. Bring to a boil and cook for 10 minutes until potatoes are tender.
  2. Add the cheeses and cook until cheeses are melted. Stir in the parsley. Taste and adjust for salt and pepper.
