Chocolate Chip Skillet Cookie This chocolate chip skillet cookie is just like a classic chocolate chip cookie but with less sugar and saturated fat and a boost of fiber from whole-wheat flour. It’s soft in the center and crispy around the edges, with plenty of warm, melted chocolate throughout.

Ingredients

  • 2 cups all-purpose flour
  • ¾ cup whole-wheat flour
  • 1 teaspoon baking soda
  • ¾ teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup packed brown sugar
  • ⅔ cup granulated sugar
  • ½ cup unsalted butter, softened
  • ½ cup canola or vegetable oil
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1 cup bittersweet chocolate chips, divided
  • Coarse sea salt, such as Maldon, for garnish

Directions

    Step 1

    Preheat oven to 350°F. Coat a 10-inch cast-iron skillet with cooking spray. 

    Step 2

    Whisk all-purpose flour, whole-wheat flour, baking soda, baking powder and salt in a medium bowl.

    Step 3

    Place brown sugar, granulated sugar, butter and oil in a large bowl; beat with an electric mixer on medium speed until fluffy, about 3 minutes. Add vanilla and beat until combined, about 10 seconds. Add eggs, 1 at a time, beating until combined after each addition, about 20 seconds, stopping to scrape down sides as needed. 

    Step 4

    Add half of the flour mixture to the sugar mixture and fold in with a spatula just until combined. Add the remaining flour mixture and 3/4 cup chocolate chips; fold until combined.

    Step 5

    Press the dough evenly into the prepared pan. Top with the remaining 1/4 cup chocolate chips. Bake until the top and edges are golden and the center is just cooked through, about 35 minutes. Let cool for 5 to 10 minutes. Garnish with coarse sea salt, if desired. Slice and serve warm.
