Baby Greens with Pears & Roquefort This is a great holiday dinner recipe or any time you want to “wow” your family or guests.


  • 2 Tbsppecans, chopped
  • 2 Tbspsugar
  • 3 cbaby greens or lettuce of your choice
  • 3bartlett pears, cored and chopped
  • 1 1/2 ozroquefort cheese
  • 1/2fresh avocado, diced
  • 1/2 cgreen onions, thinly sliced
  • 3 Tbspred wine vinegar
  • 1 1/2 tspsugar
  • 1 1/2 tspdijon mustard
  • 1 clovegarlic, minced or pressed
  • 1/2 tspsalt
  • ·pinch black pepper

How to Make Baby Greens with Pears & Roquefort

  1. Blend dressing ingredients beginning with red wine vinegar through black pepper in a blender and set aside.
  2. In a skillet, over medium heat, cook pecans with 2 tbsp. sugar. Gently stir until sugar is melted and the pecans become caramelized. Carefully transfer hot nuts to a sheet of waxed paper and allow to cool.
  3. In a large serving bowl, combine lettuce, pears, cheese crumbles, avocado and green onion.
  4. Refrigerate until read to serve – then add dressing and toss well. Scatter pecan pieces over the top.
